Carrageenan

This food product ingredient has been derived from edible sea weed and is used mainly in dairy and meat products as a thickener and stabilizer. The main varieties of Carrageenan available in the market differ in their degree of sulphation.  Ever since the 15th century, the extract of sea weed has been used as food additives. Other ancient communities also used this element. These are larger and highly flexible molecules and thus they have a very strong ability to form gel structures at room temperature.carrageenan

History

Carrageenan was first introduced in the industry in the early 1930s but their frost use was in China. The amazing thing about this ingredient is that it can be prepared at home using a traditional recipe. The following procedure is followed;

  • 5 Oz Irish moss is cooked with 8 quarts of water for 10 minutes
  • 2 quarts of water rapidly added to the hot brew
  • Strain through a cloth after the mixture has cooled
  • Cool for 24 hours and you have your gelatin product.

Carrageenan is a little additive mostly found in almond or coconut milk as an emulsifier or thickener. It is a family of linear sulfated polysaccharide. There are actually two forms of this ingredient;

  • Degraded
  • Under graded

carrageenanMost of the animal studies conducted on the ingredient have proved that there is a slight risk of intestinal congestion with extensive use of the ingredient. However, there is no need to be fearful since the studies were conducted using the degraded form of the polysaccharide which is not accepted for human consumption. There is limited research conducted on humans to establish the safety of this ingredient due to ethical reasons.
